~blood orange mousse recipe~
4 medium eggs
3 ounces sugar
7 fl ounces fresh blood orange juice
2 leafs gelatin or 1 tsp powdered
5 fl ounces whipping cream
seperate eggs
whisk egg yolks and 1/2 the sugar in a double boiler till ribbon
whisk in juice
bloom gelatin then whisk in egg mixture
leave aside to cool
whisk egg whites with remaining sugar till stiff
in seperate bowl whisk the cream till stiff
fold both into the egg mix very gently trying to not loose any air
place in containers and chill in frig to set

1/2 cup butter
2/3 cup cocoa powder
3 cups powdered sugar
1/3 cup milk
1 tsp vanilla extract
-melt butter
-stir in cocoa
-alternately add powdered sugar and milk
-beat till spreading consistency
-add a small amount of additional milk, if needed
-stir in vanilla
-yeilds 2 cups frosting

1 1/2 tsp baking powder
1 1/2 tsp baking soda

2 tsp vanilla extract
1 cup boiling water
-heat oven to 350 degrees f
-grease and flour pans
-stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.
-add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes
- stir in boiling water and pour into prepared pans
-*batter will be thin*
-bake 30 to 35 minutes or until wooden pick inserted in center comes out clean
(time pending on size of pan).
-cool 10 minutes and remove from pans to wire racks
-cool completely then frost or decorate

16 ounces milk
16 ounces heavy cream
2 vanilla bean split and scrapped
7 ounces sugar (split 1/2 and 1/2)
1 ounce karo syrup
1/4 tsp salt
15 yolks
*simmer milk, heavy cream, vanilla bean, karo syrup, 1/2 the sugar(3 1/2 ounces)and salt, on medium heat stirring 7-10 minutes.
*remove from heat and cover, let steep 5 minutes.
*whisk egg yolks and 1/2 sugar(3 1/2 ounces) till ribbons appear.
*temper the two together.
*place back on heat and stir constantly till thick.
*strain liquid and place in ice cream maker.
