3 oz chocolate 72% chopped
2 cups whole milk
2 cups whole milk
4 tbls. unsalted butter
1 vanilla bean split
3/4 cup and 2 tbls. ap flour
2 tbls. cocoa powder
2/3 plus 1/4 cup sugar
pinch of salt
1 egg
3 egg yolks
3 tbls. dark rum
vegetable spray
put chocolate in medium bowl
scald milk, butter and vanilla bean
pour over chocolate and whisk till melted
sift together flour, cocoa powder, sugar and salt
in seperate bowl whisk eggs then add rum and whisk till smooth
add dry ingredients to egg mixture slowly to avoid lumps
slowly add in chocolate mixture
strain and refrigerate over night
preheat oven to 400degrees
spray cannele molds and fill almost to the top
let batter rest for 30 minutes or more
bake at 400 degrees for 60 to 75 minutes
till crisp and set
will spring back when poked, flip on wire rack, leave in molds to cool
serve same day
