~quince jam recipe~

6 cups quince grated (about 5-6 )
4 1/4 cups water
1/4 cup lemon juice
1 Tbsp. lemon zest
4 cups sugar

bring water, quince, lemon juice and zest to a boil, then simmer for 15 min.
add sugar and cook60 minutes or till consistency desired.
